Ingredients
- Water
- Galangal
- Bergamot Leaves
- Lemongrass
- Fresh Chili (optional)
- Fish Sauce
- Shrimp
- Mushroom
- Sugar
- NumPrikPao Chili Paste
- Cilantro
- Lime Juice
Preparation
- Add 3-5 Galangal slices and 5-10 pieces of chopped Lemongrass to a pot.
- Take 5 Bergamot leaves and cut each leaf to four pieces. Then add it to the pot.
- (optional) Slice fresh Chili or crack it, then add it to the pot. The amount of Chili used depends on your spicy preference.
- Add 500ml. of water to the pot, and start boiling.
- When the water is boiled add a cup of shrimp. Then keep boiling.
- When the soup has reached the boiling point again, add 2 teaspoons of chili paste. Stir and mix Chili paste thoroughly.
- Add 1/3 cup of Mushroom slices
- Season it with Fish Sauce and sugar.
- Wait until Mushroom is cooked, then add chopped Cilantro.
- Turn off stove, then season the soup with Lime Juice.
- If you buy dry rice noodle, place the noodle in a bowl. Add water and let it soak for 5 minutes. Or follow the instruction on the package.
- Boil 500 ml of water. When it is boiled, add the soaked Noodle that we have already prepared. Wait until it cooked. Then use filter to pour water out, and place the cooked Noodle to a serving bowl. Then add soup to the serving bowl.
