Originated in India, this recipe had been brought to Thailand by Melayu Merchants. Then the recipe was adjusted and adapted to please Thai Royal by a Persian Chef who worked in the palace more than five hundreds years ago. Today Massaman is one of the most popular Thai dishes around the world.
Ingredients
- Vegetable Oil
- Chicken
- Massaman Curry Paste
- Coconut Milk
- Potato
- Baked Peanut
- Cinnamon
- Star Anise
- Siamese Cardamom
- Sugar
- Fish Sauce
Substitute Ingredient(s)
- You can use milk or cream instead of Coconut Milk.
Preparation
- Peel two potatoes and cut them in pieces.
- Fry and stir 1 tablespoon of Massaman Curry Paste in 1-2 tablespoons of Vegetable Oil for 1 minute. Then add two pieces of Chicken thighs or drums, 2-4 Cinnamon sticks, 5-10 Star Anises, 10-15 Siamese Cardamom seeds and potatoes. Add some water (To avoid burning the pan while waiting for chicken and potatoes to be cooked). Then wait until chicken and potatoes are cooked.
- Add 3 tablespoons of Powderized Peanut, and 2 cups of Coconut Milk to the pot.
- Wait until it is boiled, then season it with Sugar and Fish Sauce.
