Scomber in Chili Paste

Ingredients

Preparation

  1. Fry Thai Scomber in Vegetable Oil until it is cooked and flaky. Let it cool down.
  2. Fry 5 peeled Shallot, 7 cloves of Garlic and some Chili in a pan without oil. Keep stirring it, so it does not burn.
  3. Take Shallot, Garlic and Chili from the pan, then smash them in a mortar. Add fried Scomber meat. (Be careful to eliminate the fish bone.) Gently smash Scomber meat.
  4. Add little bit of boiled water.
  5. Season it with Sugar, Lime Juice and Fish sauce.
  6. Mix it thoroughly.
  7. Serve this dish with rice and your choice of fresh vegetables or steamed vegetables such as fresh cucumber, steamed Napa, steamed String bean, etc.
